BBQ MUSSELS FROM THE DUTCH OVEN

BBQ mussels from our new Dutch oven

What do you need?

Ingredients (for 4 persons):

  • Mussels, 1 kg
  • Blonde beer, 250 ml
  • White onion, 1 whole
  • Green peas, 100 grams
  • Garlic, 3 cloves
  • Overall rub—add to taste
  • Lemon Garlic Rub—add to taste
  • Dried parsley, 1 tablespoon

Directions:

Start by washing the mussels. Remove any mussels that start to float to the surface. Those are bad.

Next, we remove the mussels from the water and shake off the water.

We’re now lighting the barbecue to 160 degrees using a direct heat setup. We’re using Clean Charcoal and wood shavings for this. We’re placing the Dutch oven inside so it can preheat.

Now dice the white onion and garlic. Add them to the Dutch oven along with the peas and sauté. Next, add the mussels and the beer. Add the rubs to taste. Finally, stir in the parsley.

Stir everything together and let it cook on the barbecue for 10 to 12 minutes. Once all the mussels have opened, they’re ready to eat right away.

Cooking tip: Place the Dutch oven lid upside down and use it to hold the empty mussels.
