When choosing charcoal, do you also think you mainly need really large pieces? That seems logical, but in practice it’s about something else: the right grade.
High-quality charcoal consists of a good mix of pieces that fit together well. This ensures that your fire burns more steadily and that the air circulation in your barbecue is better controlled.
So-called restaurant charcoal is a good example of this. It usually comes in a convenient, consistent size, which works perfectly in a kamado, for example.
In short: not the biggest possible, but the one that suits your barbecue best.
