Bacon Crusted Spareribs

INGREDIENTS

  • 2 strands of spare ribs
  • 150 grams of bacon
  • 1 tablespoon of mustard
  • 6 tablespoons of BBQ pork rub
  • 6 tablespoons of BBQ sauce

FOR PACKING

  • 4 tablespoons light brown caster sugar
  • 4 tablespoons apple cider vinegar

OTHER SUPPLIES

  • BBQ with lid
  • White quebracho charcoal
  • 3 chunks of cherry smokingwood
  • 1 role of woodwool
  • Aluminium foil or Butcher Paper
  • Brush
  • BBQ gloves

Preparation

Remove the spare ribs from the packaging and pat them dry with kitchen paper. Lay them hollow side up on your worktop and remove the skin from the spare ribs.

Now spread the spare ribs all around with the mustard and then sprinkle with the BBQ rub. Then place the spare ribs in the refrigerator for at least an hour, but preferably overnight.

Fill the BBQ with the Quebracho charcoal and light it in 1 spot. Go for indirect heat and a temperature of around 120 degrees.
Is the BBQ at temperature? Then add the chunks of smoking wood to the burning charcoal.

Then remove the spare ribs from the refrigerator and place them on the BBQ. Close the BBQ and smoke the spare ribs for 2 hours.

After smoking, prepare two large pieces of aluminium foil or sheets of butcher paper and spread half the caster sugar and cider vinegar over the middle of each sheet.

Place the spare ribs hollow side up on the sugar and vinegar and wrap them with the aluminium foil or butcher paper.

Now put the spare ribs back on the BBQ, close the BBQ and let them steam for two hours.

After an hour of steaming, also put the slices of breakfast bacon on the grill and leave them until the bacon has become nicely crispy. Then remove the bacon from the BBQ and leave to drain and cool.

After 2 hours of smoking, remove the spare ribs from the BBQ again and unwrap them. Now put them back on the BBQ and let them dry for 10 minutes.

Then brush them with the BBQ sauce and leave them for another 20 minutes.

Meanwhile, cut the crispy breakfast bacon into small pieces.

Are the spare ribs ready? Then remove them from the BBQ and place them on a large serving platter. Then grab the diced bacon and sprinkle it over the spare ribs.

Then serve the Bacon Crusted Spareribs immediately. Enjoy your meal!
