A cold smoke generator  is required for cold smoking meat or fish. Follow the instructions provided with the cold smoke generator.

Ignite a few pieces of wood in the ash drawer of the smoker to preheat it. Hang the meat or fish using hooks or skewers inside the BBQ. Sprinkle a small amount of smoking dust over the glowing wood pieces—do not add too much, as this can extinguish the fire. Close the lid/door and leave the ash drawer slightly open to create airflow. Ensure that at least one piece of wood remains glowing at all times, adding more as needed. Follow the recommended smoking times for your dish.
