Smoked meatball pizza

After your holiday, you naturally want to stay in that holiday mood for a while longer. You can do just that with this delicious pizza from BBQ Junkie 🙂 This recipe combines delicious meatballs with pizza – the best of both worlds, in our opinion!

Essentials

INGREDIENTS

  • 2 balls of pizza dough
  • 6 tablespoons of tomato sauce
  • 1 bol of Mozzarella
  • 30 grams Parmesan cheese
  • 2 handfuls of rocket
  • 1 roasted bell pepper (cut into strips)
  • 1small red union

For the meatballs

  • 400 grams of minced beef
  • 1 egg
  • 1 tablespoon of Italian herbs
  • 2 tablespoons breadcrumbs
  • 2 tablespoons BBQ Rub

OTHER ESSENTIALS

  • BBQ with lid

  • 1 chunk smokewood Oak

Preparation

Light the barbecue and set it to indirect heat at a temperature of approximately 120 degrees.

Take a large mixing bowl and add the minced meat. Add the egg, Italian herbs and breadcrumbs and mix everything together well. Shape the minced meat mixture into 12 roughly equal-sized meatballs.

Sprinkle the barbecue rub onto a plate and roll the meatballs in it.

Is the barbecue at the right temperature? Add the oak wood chunks to the coals and place the meatballs on the grill. Close the barbecue and smoke the meatballs for 45 minutes.

Meanwhile, slice the mozzarella and place it on kitchen paper to remove most of the moisture. Cut the red onion into thin half rings and prepare the other ingredients.

After 45 minutes, remove the meatballs from the barbecue. Place the pizza stone on the grill and prepare the barbecue for baking pizzas at a temperature of 300 to 350 degrees.

Is the barbecue up to temperature again? Take a ball of pizza dough and press it out by hand from the centre to form a nice pizza base.

Sprinkle some flour on the pizza peel and place the pizza base on it. Then spread the tomato sauce over the pizza.

Now cut some meatballs in half and place them on the pizza. Top the pizza base with the red onion, roasted pepper strips and half of the mozzarella. Finally, grate some Parmesan cheese over the top.

Now slide the pizza onto the pizza stone and close the barbecue with the lid. Bake the pizza for about 5 minutes until nicely cooked.

Then remove the pizza from the pizza stone and let it rest on a cutting board for 5 minutes. During that time, you can prepare the next pizza and slide it onto the pizza stone.

After resting, finish the baked pizza with some rocket and a little more grated Parmesan cheese. Then cut the pizza into slices and serve immediately. Enjoy your meal!
